My grandmother Laura always made turkey noodle soup with leftover meat. Her no dry noodles are simple, quick, and taste great. You can double or triple the recipe easily. I hope you enjoy them as much as we did.
Grandma Laura’s Noodles
3/4c flour
1t baking powder
Pinch salt
1 large egg
I do not use a bowl for this, making these noodles directly on the counter. If you are not comfortable with this, start off using a small bowl to made the dough. You can work your way up to a bowl free noodle.
Combine flour, baking powder, and salt, pushing into a pile. Form a well in the middle and add egg. Using a fork, pull the flour into the egg until it is mostly incorporated. Then using your hands, form into a stiff ball. You can add a little water if needed.
Add a little flour to surface and roll out to your desired thickness using a rolling pin.
To cut the noodles, roll the dough into a spiral and slice every ½”.
You can leave these in long strings or cut these rolls in half again then un-spiral (as pictured).
To cook
Bring liquid to rolling boil and add noodles a handful at a time. They will cook quickly, rising to the top when done. Maintain the boil and keep adding noodles, handful at a time, mixing into liquid, they rise to top, handful, mix, rise to top… until all are cooked.
